Mobility and Steak

Are my post titles random?  Yes.  Yes, they are.  I like to let people know what they’re getting into and in this post, we will touch on the topic of mobility and….steak.

I’m making a very conscious effort to try new recipes — recipes that don’t involve canned cream of chicken soup, frozen french fries, or processed cheese.  Now, I didn’t cook a ton like that before, but it’s so much easier, isn’t it?  It’s also so easy to stop by Taco Time (because, let’s face it, Taco Time ranch is heaven in a condiment cup) and pick up tacos…but my post-4-babies waistline has me rethinking things.

So last night I made steak and brussels sprouts and crostini.  And for me (since I’m not much of a meat eater) I made tilapia.  It was pretty delicious.

For the steak, I rubbed it with olive oil and salt and pepper and seared it on each side in a cast iron skillet for a few minutes. Then I transferred it to a 400 degree oven until the internal temp was around 133 or 135, then let it rest (where the temp crept up a bit more).

For the brussels, I boiled them for a few minutes, then put them in ice water. I put a little bit of butter in a pan and browned the sprouts (that i had cut in half), added a bit of balsamic, then tossed them with bread crumbs (I like texture).

And the tilapia is just baked. Nothing fun.

It was delicious. And for dessert? Berries.

But what happened afterwards is where it gets fancy.

She took 2 steps. Our baby is mobile, even more than when she started crawling.

And the roar of cheering from the big kids could probably be heard a mile away. Ah, it melted my heart.
